Stripe is a company that allows us to take payments online. It's a Web-based service that accepts and validates credit cards (and other methods of sending money!), processes a transaction against them and then puts the money in our bank account.
In the "old days" before the Web processing credit cards involved writing down credit card numbers, creating carbon copies of credit card impressions and length payment cycles that made it hard to get money from the customer's wallet to ours. Stripe is simple: it takes payments online and puts them into your bank account within a couple of days.
We use Stripe with a notion of "Customer Records" to make it easy to organize and retrieve these Payments, but at it's core the answer to the question "What is Stripe?" is as simple as "Stripe lets the customer send us money online."
